  • Baby Mushrooms: 1/2 cup, diced – Contributes savoury flavour and B vitamins for energy.
  • Jalapeños: 1, diced – Brings spice, vitamins A and C, and a mild metabolism boost.
  • Eggs: 12 – The primary source of high-quality protein.
  • Unsweetened Almond Milk (or any milk): 1/4 cup – Helps create a light, fluffy texture.
  • Salt: 1/2 teaspoon – Enhances flavour.
  • Freshly Ground Black Pepper: to taste – Adds depth of flavour.
  • Optional: Shredded Cheddar Cheese: 3/4 cup – Provides richness, protein, and flavour, though it can be omitted for a dairy-free option.

Instructions:

  • Preheat and Prep:

Set your oven to 350°F (175°C). Spray a muffin tin with nonstick spray.

  • Prepare the Veggies:

Put the chopped spinach, diced tomatoes, mushrooms, and jalapeño evenly into the muffin cups.

  • Whisk the Eggs:

In a large bowl, mix the eggs, almond milk, salt, and pepper until well combined.

  • Fill the Muffin Cups:

Pour the egg mixture over the veggies in each muffin cup, filling them about 3/4 full. If using cheese, sprinkle 1 tablespoon of shredded cheddar on top of each.

  • Bake:

Bake for 25-30 minutes, or until the eggs are set and puffed up. Let them cool for a few minutes, then use a knife to help remove them from the tin.

  • Serve:

Enjoy warm or at room temperature. Perfect as a quick breakfast or snack.
